Does it send emails without me checking?

Not unless you want it to. It creates drafts by default, and you can switch to automatic sending once you trust it.

Will customers get two reminders if Xero's own reminders are on?

What about customers on a payment plan?

Add them to a Xero contact group called 'Do not chase' and they're skipped.
